Healthy Muffin Recipes — With all this back-to-school talk, I can’t help but think of all those busy mornings. Whether you’re a student getting to class or a parent hurrying to drop off the kiddos on your way to work, mornings can get hectic y’all!
With so much else on our minds on these on-the-go mornings, breakfast can become an afterthought and a HEALTHY breakfast even more so. We’re either stopping at a coffee shop on the way and picking up a not-so-healthy-sugar-filled treat for breakfast or grabbing any food in sight as we’re running out the door. And any food in sight doesn’t always leave us with the healthiest options, speaking from experience.
We know breakfast is an important part of our day, one that we shouldn’t skip out on. So, how can we grab a healthy (or healthy-ish!) bite to eat on these busy on-the-go mornings?? Enter the muffin.
These lil guys are the perfect breakfast to grab on your way out the door. They’re small and easy to hold in one hand, they’re mess-free, and they can be made with healthier ingredients (you can hide veggies in them for the kids!) and less refined sugar. They also freeze well, so making a big batch and having them always available is another reason muffins are a super convenient busy morning breakfast option.
